New Restaurant to Open Soon
Edward and Nancy St. Onge have purchased the property at 1844 Depot Street and renovations are currently underway to transform the restaurant into a fast-casual steakhouse, Raven’s Den Steakhouse and Taproom. A certified executive chef, Edward, has run some of Vermont’s busiest kitchens in the past 30 years. He was executive chef at Topnotch Resort and Spa and at the Stratton Mountain Club when it opened in 2002;he became food and beverage director for the Resort a few years later. Nancy works in sales and marketing for a Fortune 500 company, which is what brought them to this area 12 years ago. Ed has always worked in resort towns and is familiar with the ebb and flow of tourism. The St.Onges aim to deliver great food, great service, great atmosphere and fair prices. They will offer a salad bar packed with fresh vegetables, hand-made salad dressings, Vermont cheeses and fresh bread, and will offer wines by the glass from wine taps. They plan to open sometime in the next few weeks.
